Honey & Truffles Mascarpone Spread

Little Miss Honey + Truffles decided to live up to her namesake by creating a tasty spread that’s sure to dress up your next crostini! A perfect balance of sweet and savoury, this mascarpone spread is luxuriously creamy and teeming with flavour.


I’m always a fan of buying local honey so when the weather gets warmer and we start to head up north, I’m obsessed with stocking up on all that liquid gold! Happy to support the independent farmer and thrilled at the prospect of enjoying the rich taste, local honey is one of my most pure pleasures!


Though I am a new advocate for honeycomb—I don’t know why it took me so long to pick one up at a farmer’s market!—I enjoy all forms and flavours of honey. What’s wonderful about the honey I happened to stumble across is that it’s a smoked honey, which means it tastes just a bit bolder and smells reminiscent of cedar.

After picking up a jar the other day at a farmer’s market, I’ve been drizzling honey on top of everything I eat. Stirring it into my coffee and tea, lacing my baked goods with it, and even simply eating it by the spoonful! Noticing some spare mascarpone in the fridge, I decided I’d spruce it up by adding in some honey. Subtly sweet, but why stop there?! Whipping some air into my honeyed mascarpone, I had a wonderful idea. Why not create a bit of balance and deepen the profile with some truffle?


Offsetting the mild sweetness, the earthiness of the truffle salt provided much needed salinity and richness. Sampling my creation with the back of a spoon, I felt my eyes roll into the back of my head. Luxury on the tip of my tongue!

Obsessed with my new spread, I generously slathered it on a piece of toasted bread with peach slices and basil and felt myself fall further into absolute bliss. For the next couple of days, I was making this spread nonstop. I brought jars of mascarpone on picnics to spread on top of crackers and to dip fresh strawberries into. I coated salty ham and prosciutto sandwiches with it and—like local honey—sometimes I just ate a little off of a spoon!

Perpetually inspired by the combo that is honey and truffles, I’m always thrilled when I can use those ingredients to elevate something that's otherwise fairly ordinary and mundane. By adding these basic ingredients, you can create the illusion of elegance while enhancing flavour.

Whip up this mascarpone the next time you have charcuterie or want to impress your gal pals at wine and cheese night. It’s sure to become everyone’s latest guilty pleasure!

Honey & Truffles Mascarpone Spread *Makes 1 cup*

INGREDIENTS

  • 1 cup mascarpone

  • 2 tablespoons smoked honey

  • 1 teaspoon truffle salt


METHOD

  1. Whip mascarpone with a whisk for a couple of minutes until smooth and airy.

  2. Drizzle in honey and truffle salt. Fold in, making sure to incorporate air.

  3. Add to a crostini or store in an airtight container in the fridge!
