Best Ever Roasted Broccoli

Every now and again I’ve been know to binge on broccoli. No shame in it. There could be worse things to munch on. For instance, So Good Cashew Salted Caramel Cluster Ice Cream. On a lazy Friday night I can never seem to put down the spoon!


Anyways, roasting a nice, big head of broccoli is a great way for me to get back on the healthy eating wagon. When I’ve had a few days of not so healthy eating and drinking, this meal redirects my appetite and reminds just how tasty vegetables are.


Though I tend to enjoy broccoli in all forms (raw, steamed, fried, breaded… you get the idea), roasted broccoli is by far the greatest way to enjoy this vegetable. And let’s face it, anything roasted is usually spectacular. Carrots, brussel sprouts, potatoes, the list can go on forever! Roasted vegetables just seem to develop richer flavours, making them #simplydecadent.


But broccoli isn’t just tasty, it’s also quite the superfood. Broccoli is loaded with antioxidants, minerals and vitamins like A, B, C, E and K, which help keep the body looking and feeling great!


According to Healthline broccoli can also:


  • Reduce inflammation

  • Protect against cancer

  • Slow the aging process

  • Promote healthy bones

  • Manage blood sugar levels

  • Reduce constipation

  • Support healthy brain function

  • Protect and nourish skin



With endless benefits, broccoli can truly help nourish our bodies in all senses of the word. I’m just happy my broc obsession is healthy. I only wish it were the same for my Oreo obsession!


That’s not all though, since I tend to prepare a whole head of broccoli, I find it’s also quite satisfying. With a bit of bite still left in the broccoli, I find that it helps me slow down my eating and realize I feel full in a shorter period of time. A true win-win scenario, in my opinion.


The only drawback of preparing a cruciferous veggie like broccoli is the potential stink. Cauliflower, cabbage, brussel sprouts and even the almighty broccoli result in a certain pungent odour. I’ve experienced times when I brought leftover broccoli to the office for lunch and gotten a few looks. But, I say, eat the broccoli!

Best Ever Roasted Broccoli

*Makes 1 serving*


INGREDIENTS

  • 1 head of broccoli

  • 2 tablespoons olive oil

  • 1 garlic clove, minced

  • 1 teaspoon sea salt

  • 1/2 teaspoon lemon juice

  • 1 tablespoon Parmigiano Reggiano, grated



METHOD

  1. Preheat the oven to 425°F.

  2. Cut the head of broccoli into pieces.

  3. Toss the florets with the olive oil, garlic, salt, lemon and cheese.

  4. Spread them out on a baking sheet and roast for 30 minutes until the stems are tender.

  5. Serve as a side dish or on its own and enjoy!
